Makes 24 servings (2 pieces per serving)
Ingredients
1 2/3 cups granulated sugar
5 fl. oz. can evaporated milk
2 tablespoons butter
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups semi-sweet chocolate morsels
1/2 teaspoon vanilla extract
1/4 teaspoon peppermint extract
1/4 cup crushed, hard peppermint candy
Directions
Line 8-inch square baking pan with foil.
Combine sugar, evaporated milk, butter and salt in medium heavy-duty saucepan.
Stirring constantly, bring the mixture to a full rolling boil over medium heat. Continue to boil, still stirring, for four to five minutes. Remove from heat.
Stir in marshmallows, morsels, vanilla extract and peppermint extract. Stir vigorously for one minute, or until marshmallows are melted.
Pour into prepared baking pan; cool for one minute. Top with candy, pressing in slightly.
Refrigerate for two hours, or until firm. Lift from pan, remove foil and cut into 48 pieces.
